INGREDIENTS
Purple onion – 1 (sliced)
Eggplant – 1 (sliced and fried)
Sumac
Lemon juice
Parsley

Ingredients for Dressing :
Thick yogurt – 2 cups
Mayonnaise – 1 cup
Lemon juice – 3-4 tbsp
Salt – 1 1/2 tsp or according to taste
Black pepper powder – 1 tsp
Garlic – 3 cloves
Olive oil – 1/2 cup
Tahini- 1 tbsp

METHOD

1. For the dressing …. Grind the garlic with olive oil ( no water at all, if required add more olive oil ).
2. In a bowl whisk together the yogurt, mayonnaise, lemon juice, salt, and black pepper powder, then gradually add olive oil and garlic and mix it.
