RUSTIC LEEK & CHICKPEA SOUP – TORTELLINOTIME RECIPE

Ingredients (Serves 2-3)
2 medium leeks (or substitute with 1 large onion)
1 large potato (about 200g), cubed (skin on for extra fiber)
1 tin chickpeas (400g), including water
1 teaspoon tomato puree
1 small bay leaf
500ml hot water (or vegetable stock)

2 tablespoons extra virgin olive oil
Salt & black pepper to taste

  • Personally, I prefer a cream leek soup with potatoes. I know that Sicilians use chickpeas a lot in their cuisine in various recipes. I also use the ones in tin since it takes a long time to cook them.
