High protein paneer pudina subzis #recipe
As a vegetarian who’s trying to get more protein in, I’ve made paneer a staple – I eat it at least once a day!
So this is me trying to add it to different types of gravies so I don’t get bored!
Recipe:
Make a coarse paste of 1 cup mint + 1 cup coriander leaves and stems + 6 garlic cloves
In a pan, heat oil, and saute 150g of paneer with salt and pepper and till golden brown.
Keep that aside.
In a pan, heat oil, add
1 tsp cumin seeds and 2 cloves and saute that.
Add 1 onion, finely chopped and cook for 2-3 mins. You can brown the onions if you like.
Add the masalas
1 tsp chilli powder
2 tsp coriander powder
1/2 tsp turmeric
Sauté the spices and add a little warm water if they start burning.
Cook for 1 min and then add the coarse paste.
Add some water if needed and count he paste for 2 mins. That’s it.
Now lower the flame, and add 1/2 cup WHISKED curd mixed with salt. This will prevent the curd from splitting.
On a low flame, keep mixing till the oil separates.
Now add the paneer, 1 tsp garam masala, pinch of sugar and salt if needed and mix that in.
End with 1 tbsp cream or if you don’t have that like me, use 1/4 cup milk!
Cook for 3-4 mins more and enjoy hot!

Add little besan (1 tsp approx)while you sauté onion, it will give better consistency to the gravy of final dish 😊
