I just picked up some sweet potatoes at the market yesterday. I'm going to make this, but I have to admit, it looks kind of sketchy. If this is awful, Andrea, I'm going to come find you. …and make you buy me a beer.
To anyone, if you own or have access to a pressure cooker, they are spectacular for cooking potatoes. Just bring it up to pressure for five or ten minutes, then turn off the heat and let it cool down. How long to cook depends on the size of the potato, you will have to gain experience to master the process. Instant Pot owners already know this.

Thanks for the video, I love Gnocchi 😛 Just wanted to share that the best Gnocchi I have ever had was in the Nile Hilton (Egypt) circa 2005. It was a Baked Gnocchi Gorgonzola and it is still the best I have ever tasted. No idea of the recipe unfortunately 🙂
