Meatballs
½ lb ground beef (93/7)
½ lb ground italian sausage
½ cup pork panko
1 large egg
⅓ cup grated parmesan cheese
3 cloves garlic, minced
2 tablespoons finely chopped parsley
1 teaspoon dried oregano
1 teaspoon salt
½ teaspoon black pepper

Soup
3 tablespoons olive oil
½ yellow onion, chopped
1 carrot, sliced
3 stalks celery, sliced
3 cloves garlic, minced
½ teaspoon salt
½ teaspoon black pepper
8 cups chicken broth
1 cup keto lupini rice
3 cups baby spinach leaves

Add all ingredients for the meatballs to a large bowl and mix until combined.
Form small meatballs by scooping up 1 heaping teaspoon of the mixture and rolling it in a ball that is about ¾-1-inch in diameter. Repeat with remaining mixture. This should make around 75-80 meatballs.
Pour olive oil into a large pot or Dutch oven. Heat over medium heat. When oil is hot, fry the meatballs in batches, turning to brown all sides, about 3-4 minutes. Transfer to a paper towel-lined plate and repeat with remaining meatballs.
Show chopping onion, carrot and celery in the video.
Add the onion, carrot and celery to the pot and cook, stirring occasionally, until the vegetables are slightly tender. Add the garlic, salt and pepper. Stir and cook until fragrant, about 1 minute.
Return the meatballs to the pot and add broth. Bring to a simmer over medium-high heat. Stir in lupini rice, lower the heat to a simmer and let cook for 6-8 minutes or until rice is tender.
Turn off the heat and stir in the spinach until wilted. Taste and season with salt and pepper if needed. To serve top with grated parmesan cheese and chopped parsley.

  • Be careful with that LMNT. I just recently got out of the hospital after contracting the flu, and I had been drinking that stuff to try to keep my hydration up with my fever, and my chloride levels were off the charts! Now I have to drink gallons of plain water to flush all that salt back out of my body because it's not healthy and can damage the kidneys.

  • I use that Kaizen "rice" because it makes an awesome pilaf!

  • My son Daniel loves sinigang (Filipino sour soup). The flavored LMNT has maltodextrin in it. I prefer Just Ingredients since it has more potassium than sodium. I don't need lots of sodium in my drinks since all my food contains salt.

  • Did you freeze 1/2 of those meatballs for later?
    What you added to the soup looked more like about 35-40 not the 75-80 from the recipe?

  • Yummy!! But Italians do not put oregano in meatballs. Basil, garlic and parsley. Oregano also is never in sauce other than Pizza sauce. Just an FYI. To each his own, you can flavor it any way you'd like I'm just letting you know

  • FYI -LMNT a ton of maltodextrin in their packets. It’s very high on the glycemic index and not good for us diabetics..

  • Instead of lupini rice, just scramble a few eggs and dump it is the soup and let it cook for a few minutes. Better than rice. Also, you can add some shredded chicken to add more protein!

  • How about Parish rice ? it's low glycemic.

  • Depending on where you buy it, lupini rice can be expensive.

  • Sounds so yummy! I hope to try this soup as soon as I can gather the ingredients.  
    PS Best natural lubricant for dry hands is olive oil. I keep it in a small wide-mouth jar and use the back of a spoon to apply olive oil to the back of my dry hands. Or you can just pour on a little, rub hands and then wipe palms with a paper towel.
