Lovely video! To answer your question – yes I agree with you about the white rice and to take a step further I would recommend 2 things – Basmati rice is the purest in terms of plant genetics (it's kind of like the Einkorn of flours) and the 2nd thing I'd recommend is soaking it in cold water for about 30 minutes and tossing the water before cooking it this is of course only if you can't do a longer soak but 30 minutes is ideal in terms of digestibility.

I enjoy your cooking and precious gaps information. I always have white rice because of the lectins. To rinse out the arsenic I soak the rice for 1 hour and throw the water away. In this case most of the arsenic and also some lectins in the white rice are gone. Rice is a wonderful side dish even for me as a meatbased eater.
