Ultimate Keto Fathead Dough Recipe
1 1/2 cups shredded low-moisture mozzarella cheese
2 oz cream cheese
1 large egg, beaten
3/4 cup whey protein isolate
1 T Fat Free Greek yogurt
1 t psyllium husk powder
1/4 t beef gelatin powder
1 t baking powder
1/8 t baking soda
1 t Italian Seasoning (pizza dough) OR 1/4 cup Powdered Confectioner’s Sweetener (sweet applications)
1/4 t salt

In a microwave-safe bowl, combine the shredded mozzarella and cream cheese.
Microwave on high for 30 seconds, stir, and microwave for an additional 2 rounds of 30 seconds each until fully melted. Stir until the mixture is smooth and gooey.
In a separate yellow bowl, whisk together the whey protein isolate, psyllium husk powder, gelatin powder, baking powder, baking soda, Italian seasoning (if using), and salt.
Add the beaten egg and Greek yogurt to the melted cheese mixture. Stir quickly to combine before the cheese cools down.
Add the dry ingredient mixture to the cheese mixture. Mix thoroughly using a wooden spoon, spatula, or your hands. If the dough is difficult to combine, warm it slightly in the microwave for 10–15 seconds to make it more workable.
Knead the dough gently until it is smooth and elastic. If the dough feels sticky, dust it lightly with whey protein isolate but avoid adding too much.
Preheat your oven to 375 F.
Roll out the dough between two sheets of parchment paper to your desired thickness, depending on the application.
For pizza crust or flat applications, bake for 7 minutes, then flip and bake for an additional 2-3 minutes until golden and firm, or less if you don’t want it as crispy. Up the temp to 400, top the pizza and bake for 8-10 minutes until done. If it ever seems too dry, add a little melted butter. Some ingredients are drier than others…

  • Genuinely curious here. What's the intended purpose of this dough? Is it for some special kind of diet or nutritional need? Like, is this a thing? I've never heard of fathead dough.

    I can see that it's very high protein and low in carbs, But it's pretty high in calories. Wondering if replacing the traditional pizza crust I make which is of course carb heavy, would be beneficial for my weight loss even though this would be higher calories.

  • I made this tonight. I spread it out thinly, on parchment, but it baked up rather thick. It looked amazing but was like eating styrofoam. I was so excited to try it but could not enjoy it as it was so dry ☹️
