🍫Chocolate Fudge Cake🍫
✅Ingredients:
✅For the Cake Layers:
50 grams cocoa powder
100 grams hot coffee (2 tablespoons ground coffee or 1 tablespoon instant coffee)
200 grams hot milk
130 grams melted butter
55 grams neutral tasting oil
2 eggs
1 teaspoon vanilla extract
125 grams caster sugar
125 light brown sugar
200 grams all purpose flour
1/4 teaspoon baking soda
1 teaspoon baking powder
1/4th teaspoon salt
✅For the Chocolate Fudge Frosting:
200 grams semi sweet Chocolate, roughly chopped
100 grams milk chocolate, roughly chopped
300 grams whipping cream (35% Fat minimum), room temperature
150 grams sweetened condensed milk, room temperature
150 grams salted butter, room temperature
1/2 teaspoon Instant Coffee Powder
Pinch of Sea Salt
✅Notes:
1. Preheat oven to 180 Celsius / 350 Fahrenheit.
2. This recipe gives you 3 6-inch layers or 1 8-inch layer. You can double the recipe to get 2 8-inch layers.
3. If making 2 8-inch cakes by doubling the recipe, you can slice each cake layer into 2. This will give you a 4 layer cake.
4. Bake the cakes at 180 Celsius / 350 Fahrenheit for 28 minutes or until a skewer / knife / toothpick comes out clean.
5. If making the cake in an 8-inch tin, you may want to bake the cake at 180 Celsius / 350 Fahrenheit for about 32-35 minutes or until a skewer / knife / toothpick comes out clean.
6. For the fudge frosting, highly recommend using a non-stick pan. Combine all ingredients first and melt them on a medium heat.
7. Once fully melted, lower the heat and set a timer on your phone for 5 minutes and keep cooking on low for 5 minutes, stirring constantly.
8 You can make the fudge frosting ahead of time. The frosting needs to first be cooled down to room temperature and then chilled in the refrigerator
9. If the frosting has set rock hard in the refrigerator, just leave it out at room temperature until it is a spreadable consistency.
