Cabbage and Potato Make the Best Soup! Perfect for Winter! Vegan and Vegetarian Recipe



This hearty soup is budget friendly, warming and perfect for winter! Get the recipe below 🥣

Cabbage, potato and lentil soup

(Complete instructions within the ingredients list before starting the method)

Ingredients:

3 medium onions, sliced
1 tbsp fresh rosemary, finely chopped
3 cloves garlic cloves, finely sliced
1 bay leaf
1 small cabbage, washed and roughly chopped (white cabbage, sweetheart or savoy)
2 tsp sweet paprika
½ tsp smoked paprika
1 tbsp whole grain dijon mustard
50g tomato puree
2 large potatoes, washed and diced
200g green lentils (Optional: soaked in water for 2+ hours)
1.5l vegetable stock
1 tsp tamari
5 tbsp vegan yoghurt
1 small bunch chives, finely chopped

Method:

– Heat up 1 tbsp olive oil in a large saucepan over a medium heat. Add the onions and cook for 20 minutes with the lid on, stirring every 5 minutes.
– Remove the lid, turn down the heat and season with salt and pepper.
– Continue cooking for 20-30 minutes until golden and caramelised.
– Add the garlic, rosemary and bay leaf and cook for 3 minutes.
– Turn the heat up to medium. Add the cabbage, potatoes, both paprikas, wholegrain mustard and tomato puree. Cook for 3 minutes, stirring regularly.
– Pour in the vegetable stock followed by the green lentils and stir to combine.
– Bring to a simmer, turn down the heat and place the lid on top. Cook slowly for 30-40 minutes or until the potatoes are soft.
– Stir in the 3 tbsp of vegan yoghurt. Season the soup with tamari and pepper as needed.
– Serve up and garnish with more vegan yoghurt and chopped chives.

  • For me a cabbage soup means using fermented cabbage/ sauerkraut, so this seems rather unusual to me. I also use potatoes, but I was told one has to cook them separately from the cabbage and only add them at the end, because acidic environment stops them from cooking properly. I never tested it though if it is so.
