Afghani Bolani #food
Bolani makes a great option for a comforting meal in the midst of the winter. While my beautiful town is covered in snow and we spend most of our time inside our cozy home, as a mom all I can think of is making a cozy and warm meal from scratch to put on the table for my family.
My family loves this vegetarian meal of stuffed flatbread. I serve it with a few different dips based on their liking for different condiments but traditionally it is served with green mint chutney or yogurt chutney. The leftovers are great for a quick and easy lunch option.
Bolani
For the dough:
3 cups or 375g All-purpose flour
3 tbsp olive oil
1 tsp salt
1 tsp sugar
7 Oz plus 1 tbsp water
For the filling:
2 large size potatoes, peeled and grated
1 large or two small zucchini, shredded
1 small onion, shredded or fine chopped
2 garlic cloves, fine grated
1 green chili, finely chopped- optional
½ tsp red pepper flakes
1 ¼ tsp cumin powder
2 tsp of lemon juice
¾ tsp salt
Some dried oregano or thyme, optional
½ tsp black pepper powder
Some freshly chopped mint or cilantro
Ghee or butter for shallow frying
Green chutney for serving
Combine the dough ingredients (except water) in a bowl of the stand mixer and mix. Add the water slowly and knead your dough. Knead it for a couple of minutes till it looks creamy and smooth. Cover it and set it aside for later use.
Peel and shred your potatoes. Transfer to a bowl of cold water and rinse them. Squeeze out all the excess water from the potato shreds and place them in another clean dry bowl.
Shred your zucchini and onions and add to the potato shreds. Add the rest of the ingredients to it and mix them all together.
Divide the dough into 8-9 equal parts. Roll each part into a ball. Spread all the dough balls into thin flatbreads. Keep them covered and use dry flour dust to prevent sticking.
Place the filling on one half of the dough and close the other half on top. Seal the edges and fry them shallowly in butter or ghee.
Note: make sure to fry them on medium-low heat so the filling can cook properly. Since we are using raw filling it will take a bit longer for it to cook properly. Also, the steam captured inside the two layers will help make the filling cook.
Fry them on both sides till nice golden and crispy. Serve with a green mint garlic or a cilantro chutney.
I made my chutney using green cilantro paste with some olive oil, salt, and a clove of garlic. And everything was mixed with homemade yogurt. Yum!

This is the village (i.e. pashtoon) version of Aghan Bulani….
The Afghans farsi-speaking make Bulani differently, we use Leeks or potato and onions and never fry it in butter.
We pan roast over dry heat, since the dough itself has oil in it…then after first flip, we brush the top with a bit of oil.
The result is a crispy thin wafer stuffed with Leeks and chilis. We dip it in yogurt.
For those who are sophisticated, they know the difference.
