Quick & Easy Healthy Dinner Idea!

QUICK & EASY MEDITERREAN PLATTER:
Serves 2

INGREDIENTS:
2 Boneless, Skinless Chicken Breasts
1/4 cup (60 ml) olive oil
1/2 lemon, juiced
1 tsp (5 ml) dried Oregano
1 garlic clove, minced
Salt and Pepper to taste
1 cup (240 ml) English Cucumbers, chopped
1 cup (240 ml) Cherry Tomatoes, quartered
2 tsp (10 ml) Red Wine Vinegar
1 Tbsp (15 ml) Olive Oil
2 Tbsp (30 ml) parsley, chopped
Salt and Pepper to Taste
One container of hummus
One container of Tzatziki
1 jar roasted red peppers
10-15 pitted kalamata olives

METHOD:
In a medium casserole dish, whisk together the olive oil, lemon juice, oregano, galic and salt and pepper. Set Aside.

Slice the chicken breasts vertically in half, and open to flatten. Place a piece of parchment paper on top and pound thinly to create an even layer. Place the chicken in the marinade for no longer than 20 minutes.

Meanwhile combine the cucumber, cherry tomatoes and parsley. Then add the vinegar, olive oil and salt and pepper. Toss to combine and set aside.

Heat a grill pan on medium high. One hot grill the chicken until cooked through and set aside to rest for 10 minutes.

Meanwhile, transfer the cucumber salad intpo a small serving bowl. Set in on a large 14″ dinner plate. Then add the hummus, peppers, Tzatziki and olives.

Slice the chicken into long strips and serve with the platter. Serve with pita or any type of long cracker you like best. Enjoy!

  • Happy New Year to our dear Beth!! I just read your email, and tears came to my eyes. I live in Florida, and our oldest daughter lives in Ojai. Several years ago (2017), the Thomas Fire was a massive wildfire that affected Ventura and Santa Barbara Counties and was one of multiple wildfires that ignited in southern California in December 2017. Sitting here, 2,250 miles from my daughter, I felt helpless, concerned, and worried beyond reason. So I can relate to what you are going through and pray that your parents and your beloved "old" house will come out of this unscathed.     That looks delicious! I LOVE cucumber tomato salad! 😍 And I love all the other parts of this meal, too. I've just never thought to put them all together in this way. I do grill Greek chicken and serve it with tzatziki and a salad that is lettuce plus the cucumbers and tomatoes, Kalamata olives and feta with a Greek dressing. Never thought to include hummus or just leave the lettuce out! I had actually planned to make my version this week (it's all on the grocery order I have coming on Monday) and I'm absolutely making it your way! Thanks – your timing is impeccable! 😂
