Holiday Detox Soup
Adapted from chef Eric Ripert’s silky broccoli puree, this version combines garlic, cabbage, kale and parsley for a quick and healthy soup to give your body what it needs. It was made with ingredients I had on-hand that were gonna go bad soon if I didn’t use them up.

(Vegan if using olive oil in place of butter)
1 potato
4 cups water
1/4 head cabbage
2 cloves garlic
a handful of kale
small handful of parsley
1 tablespoon butter, or olive oil (or omit)
salt & pepper
In a medium soup pot, place the water and chopped potato. Turn heat to high and bring to a boil. Once boiling for a few minutes, chop the cabbage and stir into the pot. Peel and halve the garlic and add to soup. Once the cabbage has cooked for 6 minutes, stir in the kale and continue cooking for 4 more minutes. Remove from heat.
Using a slotted spoon, transfer the veggies to a blender or Vitamix. (We do it this way, because we won’t need all that liquid in the pot. Now add 1-1/2 cups of the broth, 1-2 tablespoons of butter, salt and pepper, and the fresh parsley.
Cover the blender and hold its lid down with a kitchen towel to protect your hand. Start the blender on LOW to avoid a hot and hazardous mess. Stop the motor and add more broth if necessary. Blend more, increasing the speed, and allow the blender to puree the soup for a few minutes. This process really adds to its silky texture.
Pour the soup into two bowls or large mugs. Top with croutons. Enjoy.
