12 Days of Recipes: Day 7 [Mulligatawny Soup – Vegetarian Version Included!]

The popular carol “Twelve Days of Christmas” is actually inspired by the ancient Christian tradition known as Christmastide. Each day of the song holds significance to the time leading up to the Epiphany on January 6th.

Day 7’s recipe is a swimmingly good soup! Mulligatawny soup originates from South India and often consists of a warm, spiced broth with apples, vegetables, and a protein like lentils or chicken.
Mulligatawny Soup:
-1/4 cup butter
-1/2 cup diced onion
-2 stalks of celery, diced
-1 1/2 tbsp flour
-2 tsp curry powder
-4 cups chicken broth* (see notes)
-1/4 cup diced apples
-1/2 cup par-cooked white rice (leave slightly under-cooked)
-1/2 cup diced cooked chicken* (see notes)
-1 tsp salt
-1/4 tsp pepper
-1/8 tsp thyme
-1/2 cup cream
-Melt butter in a soup pot over medium heat
-Add onion and celery and sauté until softened, but not browned
-Add flour and curry powder, stirring to thicken
-Add chicken broth, cover and simmer for 30 minutes
-Add apples, cooked rice, cooked chicken, salt, pepper, and thyme; cover and simmer for an extra 15 minutes
-Add cream and serve
*For a vegetarian version, substitute chicken broth for veggie broth and cooked chicken for 1/2 cup cooked lentils
