  • Apparently those fluffy cheesecake need some kind of protein eggwhite powder stuff if I remember correctly. It helps the cakes stability and for some reason almost all bakers online have decided to not tell people 😐

  • I think a suggestion to stop the cake from deflating is to leave the cake to rest upside down, though it might fall out if you have the baking paper around the edges

  • So let the cakes cool a few minutes, like 5 (while still in the pan) to settle bit and then flip them upside down (still in the pan) on a cooling rack and let them cool for another five min at least, that helps keep them fluffy and not deflate
