How to make sourdough starter?
Making sourdough is actually very easy. I’ll show you how to do this in this video. It also works with gluten-free grains. But don’t use a store-bought flour mixture (as it contains binding agents) but pure flour, ideally.
Whole grain rice flour is particularly suitable for beginners in gluten-free baking.
By the way, the gluten-free sourdough starter can also be used for baking containing gluten!
It’s best to watch the video several times so that you don’t miss any of the steps.
Mix 50 g of finely grated apple (WITH peel) with 50 g of flour (of any kind, including gluten-free) and 50 g of water. Mix the whole thing vigorously to form a paste-like mass, cover the bowl and let it stand at an approximate temperature of between 25 and 28 degrees Celsius. (Near the heater, stove…, place a hot water bottle next to it, etc.)
After about 24 hours, feed this mass for the first time with 50 g flour and 50 g water (from now on NO APPLE anymore!).
Cover and leave in a warm place for 24 hours. Then comes the next feeding. You always feed with 50 g flour and 50 g water.
Continue feeding every day once. After 3 – 4 days the sourdough is ready. It smells sour, has blistered and has increased in volume.
If it’s too cold, it will take longer!
TIP: Add a teaspoon of honey to speed up the process when it’s cooler.
🍏 How do you store sourdough?
Pour the finished sourdough into a jar with a screw lid and store it in the refrigerator.
To ensure that the sourdough lasts forever, you should feed it once a week.
🍏 How to feed sourdough? Very easy!
Add 50 g flour and 50 g water, stir, leave to stand at room temperature for 24 hours. Bubbles should form! Then back into the fridge.
If you forget to feed it every now and then and only feed it every 2 weeks, it will usually survive!
How do I bake with sourdough?
Use the sourdough starter as directed in your recipe.
To do this you usually have to ACTIVATE it first.
🍏 How do you ACTIVATE sourdough?
Almost the same as the feeding you already know, but you don’t have to wait as long.
Weigh out 1 part (e.g. 50 g) of sourdough starter, add 1 part (e.g. 50 g) of flour and 1 part (e.g. 50 g) of water, stir, cover and leave it for approx. 6 hours in the warm. Bubbles must form!
Then you can use the sourdough for your recipe.
