Pro Athlete Veggie Burgers

Chef Karen P Johnson, MS, RDN, LD
Ingredients:
For Burgers
2-15 oz can black beans, drained and rinsed
1 medium onion, diced
1 poblano pepper, diced
1 medium carrot, peeled and grated
1 stalk of broccoli, chopped
2 large handfuls of spinach, roughly chopped
2 cloves garlic, minced
2 tbsp Tamari
½ cup rolled oats
2 tbsp ketchup
1 tbsp Worcestershire sauce

Toppings:
Bibb lettuce leaves, washed and dried
Tomato, sliced
Avocado, sliced
Pickled sliced jalapeños
Roasted red pepper sauce

Method:
1. Preheat oven to 350°. Arrange black beans on a baking sheet and roast for about 10 minutes to remove some of the moisture.
2. In a large pan, sauté the onion, garlic, pepper, carrots, broccoli, and spinach with the tamari over medium heat.
3. Place the rolled oats in the bowl of bowl a food processor and process until oats are finely ground. Add the sautéed vegetables, black beans, ketchup, and Worcestershire sauce to the food processor. Pulse until mixture begins to hold together, but still has some larger pieces of beans and vegetables for texture.
4. Form burgers into patties using ½ cup measurer for uniformity. Flatten slightly to about 1 ½ inches thick and place on a silicone or parchment lined baking sheet. Bake for 15 minutes. Flip burgers and bake an additional 10 minutes.
5. Enjoy burgers on Bibb lettuce leaves topped with sliced tomatoes, avocado, and pickled jalapeños (If desired), and drizzled with roasted red pepper sauce.

  • Hi how much cilantro would I put in the blender?

  • Hi how long do you let the beans cool for after they are out of the oven?

  • how long do I pulse the beans and the veggies for?

  • I'm really sick of people being so extreme there's nothing wrong with using a little bit of oil it's too dry and yet you're using all that sodium from the soy sauce I would cut the sodium in half and use a little oil That's what I do

  • These are really tasty. This recipe cut through the clutter of the internet. I made my own ketchup (Miyoko Schinner–homemade vegan pantry) so, no sugar. And I used umami tamari splash instead of the Worcestershire sauce. Next time I'll pulse the beans once or twice before adding the veggies to make things look prettier and more like your video. But, wow, delish dish!!

  • I didn’t catch how many oats you put in the food processor?

  • What temperature is the oven for the beans?

  • Could you use mild green chilies instead of poblano pepper??? Can you use just peanut butter instead of tamari???

  • gosh nice recipe.. but geeze you are all over the shop getting in her way and then she is off about describing what is happening is a bit off putting… just the two of you stand back and let her do her thing please.

  • Think that I will need to make these they look sooo good. Thankyou for giving us the best veggie burger ever

  • Wonderfully hilarious ladies!

  • My mom and i just call it whats-this-here-sauce just to be funny.

  • My cholesterol is so bad, I mean really bad, and I think its wonderful that you do this everyone! Thank you, thank you! So much!

  • I think you need 2-3 more 'wannabe' cooks in that there kitchen. Pretty chaotic already

  • I'd really like to see the roasted red pepper sauce made.. Is that possible?

  • AWESOME thank YOU so Much for sharing WOW

  • And tell the camera guy to stop shaking the camera!

  • Whenever you have cooking guests, it always seems so manic. It is so hard to watch with everyone moving around and all talking. It would be best if the two of you would stand there and be quiet and let the guest chef do the talking and teaching. I know you are having a great time, but think of the viewer. You are nonstop talking over that woman.

  • 13:01 sounds like a flock of geese flying 😂

  • I don't like to over cook my vegetables…. So I lightly saute them & canned beans are already cooked… So I alter for an easier recioe saving Time 🙏
just drain the beans real good and throw it all into the food processor cuz it does the work for you and then I add a little bit of 1/2 cup oatmeal + couple tablespoons of Flax Seeds to make things stick together Better✌️
