RECIPE (3-4 servings, 45min prep time): -400g firm tofu Pat dry it and shred with a grater. -2 Tbsp soy sauce -1 Tbsp oil -2 Tsp cumin -1 Tsp Paprika -salt to taste Toss around, spread on a baking sheet and bake at 350F/175C for 30mins (give it a stir every now and then). Sauce: -1 onion -3 cloves garlic Fry in some oil until softened. -1 Tsp cumin -1 Tsp Paprika -1/2 Tsp chili powder -2 Tbsp tomato paste Roast 2-3mins -1/3 cup (80ml) pineapple juice -1/2 Tbsp soy sauce Stir it in and bring to a bubble. Then reduce the heat and stir in the baked tofu. “Salsa verde”: -a bunch cilantro or parsley -2 cloves garlic -4 Tbsp vegan yogurt -4 Tbsp vegan mayo -1/2 lemon -1 Tsp cumin -1 Tsp agave -salt to taste Blend until smooth. Serve the tofu in tortillas with fresh veggies and the salsa.
I made it for dinner tonight and it was amazing! My husband was sceptical at first but he also really enjoyed it. I'll definitely do the shredded tofu more often ☺️

As a Japanese, who is a big tofu eater even though I’m not a vegan, it makes me sad to hear ‘an age-old question, how to make tofu taste good?’ from western people. Because tofu tastes good as it is. and European tofu looks so not tasty indeed!😂 come to Asia and eat our tofu, I’m confident we can change your conception of tofu😉

(I’ve made tofu chorizo and tofu en salsa verde, among other things )… Just a little recommendation to make it taste Mexican and not USA imitation of Mexican: reduce the cumin for like 1/5 of what you’re using or don’t use it at all! When we taste cumin we now is just not real.
I made this for my very anti-vegan family last night but I crumbled the tofu so it’d look like ground beef, and convinced my family they were normal tacos. Halfway through the meal, I told my family, “okay guys, I lied to you. This meal is completely vegan.” And their jaws dropped on the floor 🤣🤣 my grandpa looked right at me and said “are you serious? These are so good” and my dad, who’s the most avid carnivore I know, went back for seconds 🤣🤣🤣🤣 I just wanted to teach them that vegan/vegetarian food can taste good

That is just cilantro dressing, if doesn’t have chiles it’s not salsa.
