White Bean Bread Recipe (Gluten-Free)

Ingredients:
– 1 1/2 cups (220g) cooked white beans (cannellini or navy)
– 2-3 eggs (130g)
– 1/4 cup (20g) mixed seeds (sunflower, pumpkin, sesame)
– 2 tablespoons (25g) avocado oil
– 1 teaspoon gluten-free baking powder
– Salt (optional)
Instructions:
1. Preheat oven to 180°C (350°F).
2. Blend beans, eggs, avocado oil, baking powder, and salt (if using) in a blender until smooth.
3. Add mixed seeds and blend until well combined.
4. Pour batter into a greased 9×5-inch loaf pan.
5. Bake for 40-50 minutes or until a toothpick inserted comes out clean.
6. Let cool on a wire rack for 10-15 minutes before slicing.
