Homemade Vegetable Goulash with Smoked Paprika – Vegetarian Recipe

This week Richard is cooking a delicious vegetable Goulash with carrots, parsnips and butter beans. The beauty of this recipe is you can use whatever you have in stock at home. The principal flavouring is smoked paprika which has a mild flavour with a slight spiciness.

Ingredients

Olive oil
2 medium red onions chopped roughly
3 celery stalks with leaves
2 blocks frozen garlic
2 rounded tablespoons smoked paprika
2 medium potatoes cut into chunks
3 parsnips cut into chunks
5 medium carrots cut into chunks
1 400g tin tomatoes
1 heaped tablespoon tomato puree
500 ml vegetable stock
3 small bay leaves
A couple of sprigs of Thyme if you have it – or dried.
400g tin of butter beans
Black pepper
Pinch of salt
Greek Yoghurt
