-2 cans black beans (rinsed & drained) -olive oil or your cooking oil of choice -half an onion, chopped -half a red pepper, chopped -1 medium sized tomato, chopped -1/3 cup vegetable broth -1 packet of siete taco seasoning -1 tsp ground garlic -1 tsp ground turmeric -cheddar cheese -taco tortillas -cilantro (optional)
Instructions:
1. on medium heat, add oil to pan. 2. add onions, red bell pepper, and tomato and cook for about 10 minutes, stirring frequently. 3. add the rinsed and drained black beans, taco seasoning, the ginger and turmeric, and the vegetable broth. 4. stir and simmer on low for about 15 minutes. 5. transfer mixture to a food processor/blender or use an immersion blender to mush up the mixture. make sure you just pulse it a few times. you don’t want it to turn into liquid. you can also just use a masher if you’d prefer. 6. pre-heat oven to 425 degrees F 7. assemble the tacos on a sheet pan: -place mixture on one side of taco -add cheese and cilantro -fold and close taco (like in the photo) 8. bake for about 10-15 minutes/until crispy. this will depend on what tortillas you use. check in at 10 minutes. 9. serve with your favorite toppings! salsa, sour cream, guac, etc
notes:
-feel free to use a different taco seasoning pack besides siete, or even make your own! -the turmeric and ginger are for anti-inflammatory purposes. if you don’t have it, no worries! the tacos don’t *need*it
