
Oat Breakfast Cookies – Eggless, No Refined Sugar, No Butter, No Maida | Healthy Oatmeal Cookies
Today, we’re making delicious and wholesome oatmeal breakfast cookies! These cookies are packed with nuts, oats, and naturally sweetened with dates—perfect for a cup of chai or coffee. They’re super easy to make, require just a few simple ingredients and bake in under 20 minutes. Plus, we’re adding some chocolate chips on top for that extra treat! Let’s get baking!
Ingredients:
½ cup almonds
½ cup walnuts (chopped)
1½ cups oats
½ tsp salt
1 tsp baking powder
1 tsp vanilla extract
½ cup chopped dates ( I’m using Medjool dates )
¼ cup water
some chopped dark chocolate ( I’m using 70% dark chocolate )
Instructions:
Preheat the oven to 180°C (350°F).
Prepare the dry ingredients:
In a food processor or blender, add almonds, walnuts, and oats.
Blend until they form a fine powder.
Mix the dough:
Add salt, baking powder, vanilla extract, and chopped dates to the powder.
Blend again until everything is well combined.
Pour in the water and blend once more until a smooth dough forms.
Shape the cookies:
Place a sheet of parchment paper on a rolling board.
Transfer the dough onto it, cover with another parchment sheet, and roll it out evenly.
Use a cookie cutter (or any round object) to cut out cookie shapes.
Collect the leftover dough and repeat the process.
Bake the cookies:
Arrange the cookies on a baking pan and top with chopped dark chocolate.
Bake for 15-20 minutes or until they turn golden brown.
Cool & Enjoy:
Let the cookies cool completely before serving.
Enjoy them with a cup of chai or coffee!
