Ingredients:
3/4 cup chickpea flour (100g)
1 1/4 cups water (300g)
1 tablespoon olive oil (15g)
3/4 teaspoon salt (4g)
Extra olive oil for greasing
Instructions:
In a bowl, whisk together the water and chickpea flour until smooth. Let the mixture rest for 4-5 hours (or overnight) to fully hydrate.
After resting, skim off any excess foam from the top. Whisk again to recombine the flour and water.
Add the olive oil and salt, then whisk once more.
Preheat the oven to 480°F (250°C). Grease an oven tray generously with olive oil.
Pour in the batter and bake on the bottom rack for 10 minutes.
Move the tray to the middle rack and bake for another 10-15 minutes, until golden.
Let it cool slightly before serving. Enjoy!
