Put a towel under the parchment paper with the chicken before you use the rolling pin. You need a little bit of grip/friction under it so it doesn't slide around.
Looks great, been watching for awhile. I went carnivore for a month last month – what I learned: eat more fat (and of course carnivore restricts all carbs – but I'm aware that's not what you're doing and that's fine.
Carnivore taught me this trick – cook with, or spray, beef tallow/bacon grease on everything.
For a killer crust/coating – parmesean/romano cheese and crushed up 'chicharones' – makes an amazing crust – almost like the real thing. I was literally making fried (in beef tallow) chicken tenders and chicken fried steaks on this diet.
I lost 20lbs on Carnivore for a month – never have I ever eaten so much meat/bacon and it was amazing, always full, no gas/bloating, mood swings (hangry).

Eating less than 2k cals is wild. Lowest cals I got to was 2150 before I decided I was more than lean enough

Honestly for 50 extra calories get Aunt Millies low carb bagels. They are thick and dense like a regular bagel with half the calories and I think 10 grams of protein or aunt Millie keto hamburger buns for only 50 calories.
