
Vegan Pho (Noodle Soup) Recipe – Soul Food for the Brain!
Fill up on clean energy! This nutritious soup is loaded with vitamins and antioxidant rich mushrooms and herbs. Delicious for the body, mind and soul!
Ingredients:
5 shitake mushrooms
1 king oyster mushroom
1 bunch of yellow oyster mushrooms
1 bamboo shoot
1/4 carrot
1 tsp onion powder
1 tsp garlic powder
1 tbsp tamari
1 tbsp savory liquid seasoning
1/2 tbsp toasted garlic and onion flakes
mung bean sprouts
sliced red onion
cilantro
cinnamon basil que (Thai basil)
fresh lime juice
1 serving of rice noodles
Broth:
4 cups of water
1 thumb sized piece of ginger
1 shallot
2 tbsp coriander seed
1 tbsp star anise seed
5 cloves
3 kaffir leaves
1/4 cup dried basil leaves
1/2 cup lemon grass
