How long should it stay good in the fridge? Have you frozen any, if so how is the texture after freezing? I love faux ham but at $6+ a pop I'm DEFINITELY gonna be trying this recipe. I'd love to make it in bulk and freeze it if it worked out!

I tried this and you are right, it is amazing!
When I went to make it, I didn't have all the ingredients, and had to substitute a few of the items, but it still came out great! I swapped out the seitan and the other ingredients for a joint of cured, brined pork. And I must say, it tasted fantastic.
Made my first batch of seitan thanks to this recipe! Love the texture but I think I need to up the seasoning a bit for the next batch, it's a little too subtle for my taste. Either way gonna save me a fortune! For the cost of this recipe I'd normally only get like 5-8 slices of vegan ham in my local stores.
Damn I've been making seitan for years and never knew about fat inhibiting gluten formation. No wonder my seitan always sucked lol. Thanks TBD!

I'm a big fan of beet powder to add colour to seitan. It's expensive but a little goes a long way.
