Making gluten free “Seitan”. See part 1 for how I made this.
Gluten free bread flour, gram flour, a vegetable stock cube, a sachet of miso, xanthan gum, nutritional yeast, olive oil and water.
No gluten, so harder to make the correct texture, but I persevered and kneaded it a lot.
