In this video, I’ll show you how to make this authentic Persian food using a simple ingredients list that keeps the recipe easy to make. Following the old-fashioned recipe method, we’ll bring out the rich, natural sweetness of walnut halva, turning it into a healthy dessert that fits perfectly into a wholesome treat category. Plus, it’s a gluten-free dessert, making it a great choice for everyone!

Ingredients for 3 servings:

Walnuts: 4 cups 🥜
Broken rice (medium-sized): 2 cups 🍚
Butter: 50g 🧈
Sugar: to taste 🍯
Water: 5 cups 💧

Instructions:

Step 1: Prepare the rice
First, wash the rice well. Since the rice needs to be crushed, it’s better to use broken rice. Wash the rice 2-3 times, then soak it in a bowl of water for at least 2 hours. After soaking, drain the rice.

Step 2: Grind the rice
Place the soaked rice into a grinder (either electric or manual) and grind it slightly. It doesn’t need to be powdered completely; just crushed enough. In traditional methods, the rice was pounded in a mortar until the grains broke into smaller pieces. This level of grinding is enough. Set the crushed rice aside.

Step 3: Prepare the walnuts
Now, chop the walnuts into small pieces. There’s no need to powder them, but they should be chopped finely. It’s best to chop 2 cups of walnuts more finely and the other 2 cups a bit coarser. Set the walnuts aside.

Step 4: Combine the ingredients
Place a pot on medium heat and add the butter. Once the butter is melted, add the walnuts and sauté them lightly. Stir constantly until the walnuts become slightly darker in color. Next, add the ground rice and sauté for a few more minutes. Afterward, pour in the water and stir everything together until well combined.

Step 5: Cook the halwa
Keep stirring the halwa mixture constantly to prevent it from sticking to the pot. Keep the heat on very low. This process may take more than an hour for the walnuts to release their oil and for the halwa to thicken. Once the halwa has thickened to your liking, add the sugar and stir until it is fully incorporated. After about 15 minutes, turn off the heat.

Note: The cooking time may vary depending on the quality and quantity of ingredients, and it can take several hours.

Step 6: Serve the walnut halwa
Finally, pour the halwa into a serving dish and smooth the top with a spoon. You can also press it into a mold, let it cool, and then remove it from the mold. Alternatively, pour the halwa into a tray and flatten it with the back of a spoon. For decoration, you can make cuts on the surface with a knife. Place the halwa in the fridge to set. Once it has set, you can garnish it with chopped nuts or shredded coconut and serve.
