Berber Tagine (Vegan) / طاجين بالخضر
No meat, no problem ! Slow cooked bouquet of colourful vegetables with a beautiful mix of spices and herbs resulting in a delicious/low-cost tagine. Served best with moroccan side salads and some warm moroccan bread ! Enjoy !!!

Cooking time: 2 Hours (Including prep time)
Ingredients:
Olive Oil: 4 Tbsp
Sea Salt: 1 tsp
Pepper: 1 tsp
Paprika: 1.5 tsp
Coriander: 2 tsp
Turmeric: 2 tsp
Ginger: 1.5 tsp
Water: 100 ml / 3.4 fl oz
Garlic: 3 Cloves
Parsley: 2 Tbsp
Cilantro: 2 Tbsp
Tomato Puree: 200 g / 7 oz
1 Onion
2 Small Potatoes
1 Turnip
2 Cauliflower Fleurettes
1 Red Bell Peppers
1 Zucchini
1 Carrot
Green Peas (Handfull)
Olives (8 to 10 olives)

why is there a lemon on the lid? is that a special trick instead of dilling water in?
But zucchini is not a tough vegetable. I would add it a bit later 🙂

this is a 10/10 recipe. easy, incredibly affordable and so delicious. i’m so surprised with the result. mine even got burned a bit (i cooked it in a dutch oven) but that added a smoky flavour you usually find in great restaurants. thank you!
Tajine effect would be better if not polished .

I got an Electric Stove, but i dont know if every kind of Tajine works on a Electric Stove and if, how to handle it before first use ? Can you recomend a Tajine and give me some Tipps ? When my tajine bubbles, I put a spoon in or an olive that props it open a crack

So, I tried this recipe for the first time tonight… and after having tried previous Moroccan recipes in the last weeks for vegetable tagine, I was super happy with how it turned out. I would've paid for it at a rustic homestyle restaurant, I was that happy with it! Really delicious and I hope to evolve and improve in my coming versions. I also have so much deeper appreciation for Moroccan food now, so much labour goes in to get it right but so worth it! Thanks for the inspiration!
