🌱 Homemade Vegan Sausages with Tahini Sauce 🌱

🛒 Ingredients:

✅ For the sausages:
• 🥄 Chia seeds: 2 tbsp
• 💧 Water: 6 tbsp
• 🍚 Quinoa: ½ cup
• 💦 Water: 1 cup
• 🧂 Salt: ¼ tsp
• 🫘 Cooked chickpeas: 1 cup
• 🥕 Carrot: 1 (grated, excess juice removed)
• 🧅 Onion: 1 (grated, excess juice removed)
• 🧄 Garlic: 2 tbsp (minced)
• 🌿 Chopped parsley: 1 cup
• 🧂 Salt: 1 tsp
• 🌶️ Paprika: 1 tsp
• 🌿 Cumin powder: 1 tsp
• ⚫ Black pepper: 1 tsp
• 🌽 Corn flour: 3 tbsp

✅ For coating & baking:
• 🫒 Olive oil: For brushing
• ⚪ Sesame seeds: ½ cup

✅ For the tahini sauce:
• 🥄 Tahini: 2 tbsp
• 💧 Water: 3-4 tbsp
• 🍋 Lemon juice: 2 tbsp
• 🫒 Olive oil: 1 tbsp
• 🧂 Salt: ¼ tsp
• 🌿 Cumin & paprika: For garnish

👩‍🍳 Instructions:

1️⃣ Prepare the chia gel:

🌱 Mix 2 tbsp chia seeds with 6 tbsp water and let sit for 15 minutes until gel-like.

2️⃣ Cook the quinoa:

🍚 In a pot, combine ½ cup quinoa with 1 cup water and ¼ tsp salt. Cook over medium heat for 20 minutes until fluffy.

3️⃣ Prepare the mixture:

🥕 Grate 1 carrot and 1 onion, then squeeze out excess juice to prevent sogginess.
🫘 Mash 1 cup cooked chickpeas in a bowl.
🌿 Add minced garlic, chopped parsley, paprika, cumin, black pepper, and salt.
🌽 Mix in corn flour to help bind the mixture.

4️⃣ Knead & shape:

🤲 Knead the mixture by hand for better consistency. Let it rest in the fridge for 20 minutes.
🍢 Take equal portions and shape into mini sausages.

5️⃣ Steam the sausages:

📜 Wrap each sausage in parchment paper and steam for 20 minutes.

6️⃣ Bake for crispiness:

🔥 Remove the sausages from the parchment paper and place them on a baking tray.
🫒 Brush with olive oil for a crispy texture.
⚪ Sprinkle sesame seeds over the sausages.
🔥 Bake at 180°C (350°F) for 25 minutes until golden and crispy.

🥣 Make the tahini sauce:

🥄 Mix tahini and water until smooth and creamy.
🍋 Add lemon juice, olive oil, and salt, then mix well.
🌿 Garnish with cumin & paprika.

🍽️ Serve & Enjoy!
