Healthy Lactation Cookies Recipe: Boost Milk Supply Naturally

As a new mom, ensuring a healthy milk supply is crucial for your little one’s growth and well-being. These Healthy Lactation Cookies are not only delicious but also packed with ingredients known to boost milk production. Plus, they’re vegan, gluten-free, and dairy-free, making them suitable for mamas with allergies or dietary restrictions. Let’s dive into this wholesome recipe!

Ingredients
– 1 cup quick-cooking oats (soft and chewy, but rolled oats work too)
– 1 cup oat flour (you can process rolled oats in a food processor)
– 1/2 cup coconut sugar (a natural sweetener)
– 1/2 cup melted coconut oil (healthy fat)
– 2 tablespoons ground flaxseed (rich in omega-3s)
– 1 tablespoon brewer’s yeast (known to boost milk supply)
– 1 teaspoon baking soda
– 1/2 teaspoon baking powder
– 1/4 teaspoon salt
– 1/2 cup dairy-free chocolate chips (optional, but yum!)

Instructions
1. Preheat the Oven: Preheat your oven to 350°F (180°C).

2. Mix Wet Ingredients: In a mixing bowl, whisk together the melted coconut oil, coconut sugar, eggs (if you’re not vegan), and vanilla extract until smooth.

3. Prepare Flax Eggs: Make flax eggs by whisking together 2 tablespoons of ground flaxseed with 5 tablespoons of water. Set aside for a few minutes until it thickens.

4. Combine Dry Ingredients: In another bowl, mix together the oats, oat flour, brewer’s yeast, baking soda, baking powder, and salt.

5. Create Cookie Dough: Add the flax eggs to the wet ingredients and stir well. Gradually incorporate the dry ingredients into the wet mixture. Fold in the chocolate chips if using.

6. Form Cookies: Scoop out tablespoon-sized portions of dough and shape them into cookies. Place them on a parchment-lined baking sheet.

7. Bake: Bake for 10-12 minutes or until the edges are golden brown. Keep an eye on them to avoid over-baking.

8. Cool and Enjoy: Let the cookies cool on a wire rack. They’ll firm up as they cool. Enjoy with a glass of milk or your favorite beverage!
