My family members described this meal as “sustenance” as the people of Namibia typically eat once a day and pap is filling and nourishing. Potjie is a meal usually cooked outside. We made it inside and vegetarian with lots of vegetables and spices – the favorite dish. #AfricanCuisine #FoodAdventure

Potjie (pronounced poy-kee) is basic to make. Key ingredients include lentils, onion, carrots, celery, sweet potato, apricots, garlic, fresh ginger, fresh rosemary, fresh thyme, and vegetable stock. **The dish includes dried spices such as red chili, cumin, cinnamon, turmeric, paprika, salt, and pepper.
Meat and pap key ingredients include sausage (we used Bratwurst), green cabbage, onions, garlic, fresh ginger, lime juice, fine cornmeal, paprika, turmeric, and salt.
Key steps for meat and pap:
We made food for ~ 10 people.
· Prep the fried cabbage. Chop green cabbage (2 heads), onions (2), and mince garlic (12 cloves), and ginger (2 pieces).
· Cook the fried cabbage. Heat several TBSPs of Canola oil. Cook the onions until caramelized. Add in the garlic and then ginger (cook for 2 minutes). Sprinkle in some dried turmeric. Add the cabbage and cook until it is softened. Tender but not mushy. Add the juice of 1 lime.
· Cook the bratwurst. We poached the sausage in simmering water for 5 minutes, and then grilled them for 12-15 minutes at 365 degrees. The internal temperature should be 160 degrees.
· Make the pap. Combine water (5 cups) and salt in a saucepan. In a side bowl, mix the fine cornmeal (2 ½ cups) and more water (2 cups). Once the water boils slowly add in the corn mixture, reduce the heat to low, and stir. The pap should be fully cooked in 5 – 10 minutes. Add the pap to a small bowl and turn it over to form a mound before you serve it.
** We added paprika and salt to flavor the pap.**
· Serve. Slice the bratwurst (diagonal) and serve alongside the pap and fried cabbage.
