Veggie & Sausage Omelette

Ingredients:
• 3 eggs
• 1 small cucumber, sliced
• 1 bell pepper, diced
• 1/4 cup spring mix salad
• 1 pork sausage link, crumbled
• 1 tbsp butter
• 1/4 cup cheese (cheddar or your choice)
• Ground pepper, to taste
• Onion powder, to taste
• Garlic powder, to taste
• Chilli flakes, to taste
• Salt, to taste
• Green onions, chopped (for garnish)
• Sour cream (for topping)

Pork Shoulder Roll and Mozzarella Salad

Ingredients:
• 1 tbsp butter
• 1 cucumber, sliced
• 2 green onions, chopped
• 1 small purple onion, thinly sliced
• 2 cups spring mix salad
• 1/2 cup mozzarella cheese (shredded or cubed)
• Onion powder, to taste
• Garlic powder, to taste
• Black pepper, to taste
• Chilli flakes, to taste
• Salt, to taste
• Your choice of dressing (balsamic, olive oil & vinegar, etc.)
• Feta cheese, crumbled (for topping)

Peanut Butter and Brown Sugar Cinnamon Banana Toast

Ingredients:
• 2 slices Ezekiel bread (or any bread of your choice)
• 1/2 tsp cinnamon
• 2 tbsp natural peanut butter
• 1 banana, sliced
• 1 tbsp honey
• 1 tbsp brown sugar
• 1 tbsp Splenda (or your preferred sweetener)
• A handful of zero-sugar chocolate chips (optional)
