Sweet Potato Dip (3-Ways) [Vegetarian] | The Lebanese Cook
**Ingredients:
– 400g uncooked sweet potatoes
– 1 1/2 tbsp lemon juice
– 4 tbsp tahini
– 1/2 garlic clove
– salt to taste
**Instructions:
– Cook your sweet potatoes in which ever way you prefer (boil/roast/…). For quicker cooking, slice into smaller pieces.
– To a mixer (or stick blender), add the cooked sweet potatoes along with the rest of the ingredients. Mix well until everything is homogeneous.
– Adjust thickness/acidity/saltiness by adding tahini or water/lemon juice/salt.
For the browned butter variation, replace tahini with 75g of unsalted browned butter.
For the peanut butter variation, replace tahini with 3-4 tbsp of peanut butter.
Get creative with how you dress the plate. Play with a variety of textures / colors.
