  • Cette galette moelleuse n’a rien de français elle est berbère d’Algérie et existe depuis des siècles si ce n’est des millainaires …une fois cuite " le matlo' " et par son énorme gonflant elle fais penser a une autre galette qui est libanaise " la pita"… Mais cela reste du matlo' …on peut la faire nature ou aux herbes(menthe…persil…coriandre fraîche…ciboulette)… on peut aussi la farcir de viande hachée aux fines herbes + les épices et des tomates concassées ou du concentré de tomates…ce qui fait que cette galette ou pain a plusieurs variétés comme les pizzas de nos jours…on les badigeonne d’huile d’olive ou de beurre frais.

    La pâte fine étalée c’est encre une crêpe fine qu’on étale avec de l’huile à la main pour les débutantes ou en les étirant sur le bord de la gasa'a jusqu’à ce qu’elle soit presque transparente qui s’appelle "msémen"origine là aussi est berbéro/algérienne là aussi c’est soit nature salée ou sucrée ou à toutes les farces possibles …

  • I wish you posted the exact recipe. I know u posted as u went, but it first says 5 1/2 cups of flour, then u said to add more…. Is that 1 1/2 cups in addition to the 5 1/2……. 7 cups total?
