Crispy Sweet Potato & Chickpea Patties, Healthy Easy Recipe, Mrs Vegan

Ingredients for the Patties 🥔🍠
• Cooked chickpeas: 1/3 cup (mashed) 🧆
• Sweet potato: 1, grated (squeeze out excess water) 🍠
• Onion: 1, grated (squeeze out excess water) 🧅
• Cooked quinoa: 1/3 cup 🍚
• Minced garlic: 1/2 tsp 🧄
• Chopped parsley: 2 tbsp 🌿
• Corn flour: 2 tbsp 🌽
• Chia seeds: 1 tsp ✨
• Salt: 1/2 tsp 🧂
• Black pepper: 1/4 tsp 🌶️
• Paprika: 1/4 tsp 🌶️
• Ground cumin: 1/4 tsp 🥄

Instructions for the Patties 🍳

1️⃣ In a bowl, mash the chickpeas 🧆.
2️⃣ Add the grated sweet potato 🍠 and onion 🧅 (both squeezed to remove excess water).
3️⃣ Add the cooked quinoa 🍚, minced garlic 🧄, chopped parsley 🌿, corn flour 🌽, chia seeds ✨, and all the spices 🌶️.
4️⃣ Mix everything well and refrigerate for 20 minutes ❄️.

Ingredients for the Yogurt Sauce 🥣
• Yogurt: 1/3 cup 🥛
• Lemon juice: 2 tbsp 🍋
• Grated cucumber: 3 tbsp 🥒
• Salt: 1/4 tsp 🧂
• Paprika: 1/4 tsp 🌶️
• Dried mint: 1/4 tsp 🌿

Instructions for the Yogurt Sauce ✨

1️⃣ Combine the yogurt 🥛, lemon juice 🍋, grated cucumber 🥒, salt 🧂, and paprika 🌶️ in a bowl.
2️⃣ Mix well, then add the dried mint 🌿 for extra flavor.

Cooking the Patties 🔥

1️⃣ Take the mixture out of the fridge and scoop out portions using a lightly oiled 1/3 cup measuring spoon 🥄.
2️⃣ Shape the mixture into patties with your hands ✋.
3️⃣ Heat 2 tbsp oil in a pan and fry the patties until golden on one side ✨.
4️⃣ Flip the patties, add 1 tbsp water, cover the pan, and let them steam for a few minutes to ensure they cook through 🍳.
