Karen’s Favorite Chili Recipe from (Laura In The Kitchen Cookbook) 2 TB Oil 1 1/2 lb. of lean ground beef 1 yellow onion diced 1 red bell pepper diced 1 jalapeno seeded and minced 3 garlic cloves minced S & P 3/4 cup of lager style beer 2 TB chili powder 1 1/2 TB light brown sugar 2 tsp. ground cumin 1 tsp dried oregano 2 TB tomato paste 3 cups low-sodium beef broth 1 (15oz) can black beans rinsed and drained 1 cup tomato puree Heat oil in a large 3 qt. pot. add meat until cooked through, add onion, bell pepper, jalapeño and garlic along with S & P. Cook until veggies are softened. Add beer and then simmer for 30 seconds. Stir in chili powder, brown sugar, cumin , oregano, more S & P, tomato paste. Cook for a minute, then stir in broth, beans and tomato puree. Bring to a boil and reduce heat to med-low. Cook for 2 hours!

Tuscan Soup –

Pepper Soup

One Pot Meal –
3 lb lean ground beef 1 chopped onion 3 garlic gloves 2 Large cans of crushed tomato 3 TB or so to taste of Beef Soup Base 2 cans of corn ( with juice) 2 cans of green beans (with juice) thinly sliced carrots zucchini 1/2 box of pasta shells S & P Italian seasoning Brown the ground meat then add onion & garlic. Cook until onions are softened. Add crushed tomatoes, and the canned vegetables including the juices. Add carrots & seasonings. Cook through for approx. a half of an hour, then add zucchini. Add water to the soup if it gets a little too thick. Then add your pasta directly into the same pot and cook until the pasta is done. It will take a little longer than usual since the pasta is having to cook with the sauce and vegetables. Once the pasta is done, sprinkle fresh pecorino Romano cheese on top & serve!

Wedding Soup –
Fill a large pot with water. Add chicken
I then add a tablespoon ( or to taste) of chicken favored soup base & pepper. Let cook until the chicken is cooked through.
Then take the chicken out, let cool and then I break it up into pieces and add back into the soup. In the meantime I make my mini meatballs and add them directly into the soup raw… they cook rather quickly and they will float to the top.
If you don’t have a delicious meatball mix like the one I used… Then here is my recipe for my homemade Meatballs:
1 egg per pound of meatball mix ( I buy a mix of ground beef and ground pork from the meat department )
1 & 1/2 cups of Italian seasoned bread crumbs
1 cup of parm. Cheese
Season with chopped fresh garlic
Parsley
S & P
Then Add pastina ( not cooked ), again it’s really up to you on how much you want. I add about a cup to my large pot. Let it cook for a bit and then I add one or two packages of thawed frozen spinach (be sure to squeeze out all of the excess water from the spinach before adding it to the soup)
Combine 2 to 3 eggs with a cup of Pecorino Romano cheese. Then slowly add it to the mixture as you constantly stir.
I taste the soup as it cooks, you may want to add a few more tablespoons of the soup base for added flavor, though taste test it first.
