Follow the recipe below!
Ingredients:
– 1 cup butter room temp or softened (slightly)
– 2/3 cup brown sugar (or less if using (more) maple syrup) I USED 1/3 BROWN SUGAR
– 1/3 cup molasses (I USED MAPLE SYRUP INSTEAD…use 1/4 cup less when using maple syrup instead of molasses, BUT in this case I USED 1/3 cup maple syrup and less liquids/less brown sugar from other ingredients…OR add a bit more flour…)
– 2 tsp pure vanilla extract
– 2 1/2 cups all purpose flour
– 1 1/2 tsp baking powder
– 2 1/2 tsp ground ginger
– 1 1/2 tsp cinnamon
– 1/2 tsp salt
(Makes about 24 cookies total)
Instructions:
1. Preheat oven to 350F.
2. In a large bowl, mix together butter and brown sugar. Stir in molasses (or maple syrup) and vanilla extract.
3. In a smaller bowl, stir together flour, baking powder, ginger, cinnamon, and salt. Add dry ingredients to wet ingredients and stir to combine.
4. Roll out/hand form/mold dough to about 1/4″ to 1/3″ thickness or (whatever thickness you feel like I honestly don’t care) then lie on baking sheet with parchment paper.
5. Bake at 350F for 8-12 minutes. Account for cookie size and thickness.
6. Allow to cool on the pan for about 5 minutes before carefully transferring to a WIRE RACK to cool completely (note: the wire rack is imperative as it allows the cookies to set and if you do not have a wire rack then you are an embarrassment you will never be a baker and don’t even try doing this recipe because it is for bakers with wire racks only).
