What I Eat In A Day Winter Edition❄️ Simple Minimalist Recipes

In this video, I’ll take you through a day in my life, showcasing easy-to-make, healthy meals that are perfect for the winter season. From hearty breakfasts to nourishing dinners, I’ll share my approach to intuitive eating and how it has transformed my relationship with food. APPLE CINNAMON PORRIDGE 🍏
(serves 1)
1 small apple (3/4 diced into small cubes and the other sliced for topping) 1 tsp cinnamon
100g porridge oats
250ml milk of choice
Toppings (honey, apple, cinnamon, yogurt, blackberries)
1. Heat a pan on a medium temperature add your oats, cinnamon and milk and allow to slowly thicken. Make sure to keep stirring!
2. After a couple of minutes add in the diced apples and stir well until combined. Allow to cook for 3-5 mins until softened.
3. Serve immediately with your toppings of choice and enjoy!

SUPER GREEN SOUP 🫛
(serves 2-3 portions)
1 onion (diced)
2-3 garlic cloves
500g of mixed greens (I used peas, edamame and broad beans but you can use broccoli, cabbage or any you like)
4-5 stems of kale or a handful of any green leaves (spinach, cavolo nero) 1 stock cube
Black pepper and salt to taste
250-300ml boiling water
Garnish with peas, mixed seeds, pea shoots and olive oil
1. Heat a pan on a medium heat with a generous glug of olive oil and fry off the onion until soft

2. Add in the garlic and cook until fragrant
3. Meanwhile add in your mixed greens with the leaves of choice along with the stock cube and 250ml boiling water (save some water as you don’t want the soup to be too watery so add to loosen later)
4. Turn down the heat and allow to boil for 5-8 mins
5. Turn off the heat and blend the soup until smooth (optional add in some vegan cream at this stage too)
6. Season to taste and serve immediately with garnishes of choice and crusty bread.
7. Can be kept in the fridge for 3-5 day and reheated. Enjoy!

PEA & LEEK PASTA 🍝
(serves 1)
1 small leek sliced into ringlets
2-3 cloves of garlic crushed (the more the better!) 50g peas
Handful of basil leaves
75g spaghetti
1 heaped tbsp creme fresh or cream cheese Black pepper and salt to taste
1. Heat a pan with a generous glug of olive oil on a medium heat and begin to sweat off the leeks until soft
2. Add in the minced garlic until fragrant
3. Add in your peas and allow to cook through. Turn down the heat
4. Meanwhile cook your spaghetti according to pack instructions (minus 2-3 mins as we want al dente) in generously salted water
5. Drain the spaghetti once almost cooked (al dente) reserving approx 1 mug of pasta water
6. Add the pasta to the leek and pea mix in the pan and add in a little pasta water to loosen (this allows the pasta to continue cooking)
7. Add in the creme fresh, basil leaves and plenty of black pepper and salt to taste
8. Stir well until combined and continue to loosen if you want a saucier consistency with the reserved pasta water
9. Serve immediately and garnish with extra basil leaves, Parmesan and olive
oil. Bellissimo!✨

Your hair looks so beautiful in this video, you always have the nicest hairstyles. Speaking of cooking, my mum was feeling a bit down recently (still mourning over dad) and she hasn't really been bothered to cook anything healthy lately. So I cooked up steamed fish (her favourite), steamed carrots and broccoli, squeezed in some lemons to infuse all of it with lemon during the steaming process. Then I chopped up some tomatoes (from the tomato plant she put in my garden) and added that too. I brought it to her house and gave it to her, upon eating it she said it was "beautiful", I have never in my entire life heard mum say any food was beautiful. I thought to myself Holly's beautiful and delicious cooking must be rubbing off on me 🙂
