Ingredients:
1 small onion; diced
1 small red bell pepper
1 tbsp fresh parsley
1 tbsp fresh basil
4 minced garlic cloves
1 1/2 lbs lean ground beef
Salt I used 2 1/2 tsp
2 tsp black pepper
2 tsp oregano
2 tsp Italian seasoning
1 tsp dried basil
1 tsp chili powder or paprika
1-2 tsp crushed pepper
2 tbsp tomato paste
28 oz diced tomatoes
15 oz tomato sauce, fill up 1/2 with water ( missed this clip)
6 cups beef broth
1 small calabacita (optional)
8-10 lasagna noodles; broken into pieces
Ricotta cheese
Fresh shredded mozzarella cheese
Parmesan cheese
Fresh basil or parsley for garnish
1 serving of love 💕

Love love making lasagna soup like sopa de fideo in the winter. I like to throw in a Parmesan rind if I have it on hand to the pot while it’s cooking. It melts so nicely into the soup.
