🍏 How to activate the SOURDOUGH STARTER?
60 g gluten free sourdough starter (👉Make any type of SOURDOUGH STARTER in 3 days!
👉 )
60 g whole grain rice flour
60 g water
1 tsp honey OR maple syrup OR gave syrup OR coconut sugar…
Mix everything in a bowl, cover and set aside for at least 6 hours / over night.
IMPORTANAT ! You can see 👉 in the video how the sourdough must look like, once it’s ready to continue.
🍏 MAIN DOUGH:
180 g active gluten free sourdough (prepared approximately 6 hours in advance / or evening before)
20 g coconut sugar
20 g psyllium husk ground
18 g ground golden flaxseed
445 g lukewarm water (not warmer than 38 degree Celsius!)
Mix everything together, stir and set a side, until it turns into a slightly runny jelly.
110 g tapioca starch
60 g millet flour
70 g potato starch
100 g white rice flour
20 g pea protein powder (if not available use 10 g white rice flour and 10 g millet flour instead)
Put dry ingredients in another BIG bowl (sift) and mix it.
🍏 Add the wet ingredients (prepared sourdough jelly), 10 g oil and 10 g apple cider vinegar OR lemon juice and stir until it becomes a uniform mass (by hand or with a kitchen aid).
Set a side approximately 1 hour covered with a bowl and a wet kitchen towl on top.
🍏 Shape the bread as shown in the video with the help of some rice flour, place it in a baking bowl and cover it with a lid. Time of rising depends on the temperature. The warmer, the faster it goes. At least 6 hours, sometimes over night. Let rise until it has increased in size slightly.
🍏 ❗❗Bake in two phases ❗❗
Bake in preheated oven (230 ° C / 460 °F) covered with a lid ❗❗ and with steam❗❗ Place a bowl with water below in the oven. Baking time: approximately 55 minutes (hot air program).
Then take lid off, lower the heat (200° C OR 190 °C / 400 °F) and bake until golden brown (approximately 10 -15 min).
Bread is finished baking when it sounds hollow when you tap it.
Allow bread to cool completely on a baking rack, covered with a dry kitchen towel before slicing!
