NO KNEAD PIZZA DOUGH
332g bread flour
282g water (85% hydration)
10g salt
0.5g (1/4tsp) active dry yeast
– mix everything together until shaggy/all the flour is incorporated, and salt is mixed in
– let it ferment at room temperature for 16-22hrs (this is pretty flexible!)
– let it cold ferment for 1 to 2 days
– oil your pan generously, place the dough in and lather with oil
– press down and stretch as far as it goes
– let it rest 1 hour in your oven (light on)
– give it another dimpling to stretch the dough to the edges of the pan before you bake or prebake at 500-550

For a traditional mixing process:
– mix the flour, water, and starter until just combined.
– After a 20-60 minute rest/autolyse, add the salt and a slight splash of water and knead for around 5 minutes.
– every 20 minutes, for the first hour, give it a stretch and fold.
– Then let ferment for 1 hour (oven with light on)
– portion into balls, cold ferment for 1-4 days.
