Italian Bean Tuna Salad
ITALIAN DENSE BEAN SALAD! Try this protein-packed meal prep salad—takes less than 15 minutes to throw together a big batch, it’s money saving, and you can use it so many different ways. On English muffins, in wraps, over greens, on toast, with crackers…I’ve eaten it 3 days in a row for lunch and I’m not sick of it yet!
This salad features bold flavors, a creamy high protein Greek yogurt dressing, beans, crunchy veggies, and your protein of choice. I used canned tuna, but you can definitely swap chicken or leave it out for a plant-based meal.
YOU’LL NEED
-⅓ c finely chopped sun-dried tomatoes
-1 can (15 oz) cannellini beans, rinsed and drained
-1 can (15 oz) chickpeas, rinsed and drained
-½ c plain Greek yogurt
-2 T olive oil
-Zest and juice of 1 small lemon
-1 tsp kosher salt
-½ tsp ground black pepper
-¼ tsp onion powder
-12 oz canned tuna
-3 stalks celery, diced
-3 T capers, rinsed
-2 T chopped parsley
Mix it up and serve however you like. It’s versatile, filling, and so flavorful.
