From the good old carrot to the veggie that survived monsoons in Japan and became one of the staples to explain longevity in the island of Okinawa. These are just some examples of why so many vegans, when asked if a vegan diet is limiting, usually say:
“But I added so many more foods than I took out!”.
This is my little PSA and challenge for you to get something you’ve never cooked with before next time you’re at the store (whether you’re vegan or not!), get out of your comfort zone and play with those veggies.
