Mini Chocolate Chip Muffins:
1 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup plain nonfat Greek yogurt
1/3 cup honey
1/4 cup olive oil
2 eggs
2 teaspoons vanilla extract
1/2 cup miniature chocolate chips
1. Preheat the oven to 375 degrees F. Grease a 24-cup miniature muffin tin.
2. In a medium bowl, combine the flour, baking powder, baking soda, and salt.
3. In a separate bowl, combine the yogurt, honey, eggs, oil, and vanilla.
Add the wet ingredients to the dry and stir to combine. Gently fold in the chocolate chips.
4. Pour the batter into the muffin tin, right up to the edge. Bake for 10-12 minutes until a toothpick comes out clean.
5. Let sit for 5 minutes before transferring to a wire cooling rack.

Mini Blueberry Muffins:
1 1/2 cups all purpose flour
1/3 cup sugar
2 1/4 teaspoons baking powder
1/4 teaspoon salt
2/3 cup milk
6 tablespoons olive oil
1 egg
1 teaspoon vanilla extract
3/4 cup blueberries, fresh or frozen
1. Preheat the oven to 375 degrees F. Grease a miniature muffin tin.
2. In a medium bowl, combine the flour, sugar, baking powder, and salt.
3. In a small bowl, combine milk, egg, vanilla, and olive oil. Add to the dry ingredients and stir to combine. Fold in the blueberries.
4. Use a cookie scoop or tablespoon to fill each muffin tin.
5. Bake for 10-12 minutes until a toothpick comes out clean.

Peanut Butter Granola:
2 cups rolled oats
1/2 cup peanut butter
1 teaspoon cinnamon
2 teaspoons vanilla extract
1/2 teaspoon salt
1/4 cup honey
1. Preheat oven to 325 degrees F. Line a large baking sheet with parchment paper.
2. In a large bowl, combine peanut butter, cinnamon, vanilla, salt, and honey. Fold in the oats.
3. Pour the granola mixture onto the baking sheet and spread into an even layer.
4. Bake for 13-15 minutes until the top is slightly browned. Watch carefully, because it burns quickly.
5. Let the granola cool for 30 minutes before breaking into pieces.

Pumpkin Energy Bites:
1 cup peanut butter
1/3 cup honey
1/2 cup pumpkin puree
1 teaspoon vanilla extract
1 3/4 cup rolled oats
1/4 cup chia seeds
1 tablespoon cinnamon
1/4 cup chocolate chips
1. In a large bowl, combine peanut butter, pumpkin, vanilla, and honey.
2. Next, add the oats, chia seeds, chocolate chips, and cinnamon. Use a spoon to combine, adding more oats if the batter seems too sticky.
3. Place the dough in the fridge for 20 minutes to let the dough firm.
4. Use a cookie scoop to scoop up the dough, and roll into balls with your hands. Store in an airtight container in the fridge.

Homemade Granola Bars:
5 cups rolled oats
2 tablespoons chopped peanuts
3 tablespoons raisins
1/2 teaspoon baking soda
1 teaspoon cinnamon
2/3 cup peanut butter
1/2 cup honey
2 tablespoons milk
1 1/2 cups applesauce
1. Preheat the oven to 350 degrees F.
2. In a large bowl, combine the oats, peanuts, raisins, baking soda, and cinnamon.
3. In a medium bowl, combine the peanut butter, honey, milk, and applesauce.
4. Pour the wet ingredients into the dry ingredients and stir to combine.
5. Line a baking sheet with a piece of parchment paper and spread out the mixture into an even layer with a rubber spatula.
6. Bake for 22-25 minutes. The granola bars will still be soft, which is how they’re supposed to be.
7. Let the pan cool for 30-60 minutes. Gently transfer the granola bar block, parchment paper and all, to a large cutting board.
8. With a pizza cutter or large knife, slice into 16 bars. Store in the refrigerator for up to 1 week.
