  • Thats how i grew up ,makig and drying the pasta. We cut them by hand. In Sovietunion we never had a mashine. Now i have one here in Canada. I hang the pasta on my laundry drying rack 😅.

  • I've used duck eggs when making bread dough, especially Challah bread. The bread has a richness that is so good.

  • The only time I tried to make noodle dough on a flat surface, mine carved a path right through my wall of flour and ran across the counter and into my baking drawer that, by chance, I had not closed completely… ugh!!! What a mess!

  • The reason it was messy was because of the size of your batch. If you had done a smaller batch for a first try, say 3 cups of flour, you would have had a fine time doing it on the board. When you get experienced with it, you'll be able to do big atches on the board.

  • The art of making Pasta and Doughs, IS a definate Skill. My Grandmother from Europe was great at it. She understood the moisture and Egg needs, for adjusting the type of noodle.
    I love watching Pasta Grannies, but did not know there is a Book! I bought a Book ftom a Channel from Turkey, that i watch devotedly. My Grandmother's relatives came from there.
    The lady i wstch reminds me of my Grandmother and i can easily imagine her Doing all of this, complete with the Fires to Cook!

  • I was so into watching you trying to mix up that messy dough that I almost was shocked off of my chair when the commercial came on, lol. I wish I had known about duck eggs being tougher than chicken eggs because I actually thought something was wrong with them and I threw them out. Live and learn but I was afraid to have my family eat them.
