I am so excited about this. I make regular sourdough with bread flour for a while and I am hoping this means I can attempt sourdough again. I just made your brown butter sourdough cookies as my very first fmf bake and that worked great. I know this will be different but will not get discouraged.
Do you recommend not using our anchor mixer for this bread?
I have been baking sourdough for many years however never with freshly milled flour.
Your recipe is over 90% hydration and the dough looks quite manageable. I had no idea freshly milled flour behaved like that.

Good morning, Kara.I am wondering what setting you put your NutriMill Impact grain mill on for grinding?Your soft white or other wheat berries?
Today, I unpacked my mill and ran it per instructions. I milled soft white on a number two. Very fine and light. ❤thanks for all you do and the many delicious recipes you share. FYI this is the replacement for the first Impact which was not working correctly from day one. I was able to watch your video where you first used your Impact mill. I saw the comparison as you ran both mills together. I realize then that mine wasn't running correctly. I contacted NutriMill, and they quickly sent the replacement. I am very pleased with this mill and will be using it often as I follow your channel 😊❤thanks again.

Looks like a great recipe! I don’t have a Dutch oven or banneton baskets. Do you think I can use a loaf pan for the cold proof and then just bake in it?
What about using lecithin instead of vital wheat gluten?

I wonder if sourdough can just be made/kneaded with a mixer like your everyday sandwich bread, and if not why.
No one that is working creating food videos or in food service should have fingernails like you have. Really not great to watch. Sorry it’s very unsanitary. If you were in a food area run by someone else, you would be sent home. I have been enjoying your channel but I can not get the end result YET. I’ve been making bread for over 40 years and this is a new learning curve. 😢
