Rajma, also known as red kidney beans, is a popular ingredient in Indian cuisine. Here’s a basic recipe for Rajma Masala:
Ingredients:
* 1 cup Rajma (red kidney beans), soaked overnight
* 2 medium onions, chopped
* 2 medium tomatoes, chopped
* 2 tbsp ginger-garlic paste
* 1 tsp cumin powder
* 1 tsp coriander powder
* 1/2 tsp turmeric powder
* 1/2 tsp red chili powder (adjust to taste)
* 1/4 tsp garam masala
* 1 tsp kasuri methi (dried fenugreek leaves), crushed
* 2 tbsp oil
* Salt to taste
* Fresh coriander leaves for garnish
Instructions:
* Pressure Cook the Rajma:
* Drain the soaked Rajma and add it to a pressure cooker with enough water to cover it by a couple of inches.
* Add 1/2 tsp salt and pressure cook for 3-4 whistles or until the Rajma is soft.
* Once the pressure is released, let the steam escape completely before opening the lid.
* Make the Gravy:
* Heat oil in a pan. Add cumin seeds and let them crackle.
* Add chopped onions and saute until they turn golden brown.
* Add ginger-garlic paste and saute for a minute until fragrant.
* Add chopped tomatoes and cook until they soften and release their juices.
* Once the tomatoes have cooked down, add cumin powder, coriander powder, turmeric powder, and red chili powder. Saute for a minute.
* Add garam masala and saute for another 30 seconds.
* Combine and Simmer:
* Add the cooked Rajma to the pan along with the cooking water.
* Stir well and bring to a simmer.
* Add crushed kasuri methi and salt to taste.
* Simmer for 5-7 minutes, or until the flavors have blended well.
* Serve:
* Garnish with fresh coriander leaves.
* Serve hot with steamed rice, roti, or naan.
Tips:
* For a richer flavor, you can add a tablespoon of butter or ghee towards the end of the simmering process.
* If you don’t have a pressure cooker, you can boil the Rajma in a pot on the stovetop. It may take longer to cook.
* Adjust the amount of water based on your preference for the gravy consistency.
* You can add other vegetables like potatoes, carrots, or cauliflower to the Rajma for a more substantial meal.
Enjoy your homemade Rajma Masala!
