If you have ever tried butter chicken then daal makhani will surely hit that spot. Let’s call it a vegetarian version of butter chicken. As much as it is light and perfect for summer, it also makes a great dinner option for cold winter days. Also, there are many serving suggestions for this creamy lentil stew. You can dip naan bread in it or serve it with white rice. Or you can also serve it as soup with bread croutons and salad.

Dal Makhni with Homemade Naan from MEK

¾ cup green or black mung beans, also calls moong dal/ 165g
⅓ cup red kidney beans, 60g
1 tsp salt
1 bay leaf
½ inch cinnamon stick
2 green cardamoms
1 black cardamom
1-star anise

2 tbsp ghee
1 tbsp butter
½ onion, very finely chopped
1 tsp garlic paste
1 tsp ginger paste
1 tsp cumin powder
½ tsp red chili powder or if you don’t like spice, use paprika
1 ½ cup fresh tomato puree

¼ cup heavy cream
2 tbsp extra butter for topping
1 tsp fenugreek leaves, dry

For naan:

3 cups all purpose flour, 375g
1 ¼ tsp active dry yeast
1 tsp sugar
4 tbsp yogurt
2 tbsp olive oil
¼ tsp baking soda
¾ tsp salt
¾ cup/ 6 Oz./ 160g lukewarm water

Activate the yeast in lukewarm water and sugar. Cover it for 10 minutes. Then add the yogurt, and oil to it. Sift the flour and baking soda over the wet mixture. Using a stand mixer, knead the dough. When the dough pulls away from the side of the bowl add salt to it. Knead for a few more minutes till the salt absorbs.
Cover the dough bowl and let it rise in a warm spot where the temperature is around 75-80 F. Let the dough ferment till it doubles in size. After that, it is ready to be used.
I made my naan over the hot griddle on the stovetop. If you have a stainless steel pan or a carbon steel pan, you can achieve the charred crust underneath our naan by using no dry flour but only water to smear it on the pan. Then use the broiler to get a golden color on top.

Soak your lentils for a few hours or overnight. Add the rinsed and soaked beans to a pot, along with salt, and the whole spices. You can put whole spices in a coffee filter and add them to the pot. Pour the water into the pot and cook it covered till the beans are very tender. You can also use an instant pot.
In another pot, melt ghee and butter. Saute the finely chopped onions in it. Add garlic, and ginger paste to it and fry. Add the rest of the spices and tomato puree and fry for a few minutes without burning it. Add the entire mixture of the cooked lentils. Continue cooking and stirring it till it reaches your desired texture and consistency. You can use a masher to mash some lentils.
Add the heavy cream to it and mix. Season with the dry fenugreek leaves and some more butter on top.
Serve it alongside naan or plain white basmati rice. May it be healthy for you. Enjoy!
