PALAK KHICHDI – What’s your favorite khichdi twist?

🌿✨ It’s not just a wholesome meal; it’s a complete experience! 🤗 As we embrace the winter chill, there’s nothing quite like a warm bowl of Palak Khichdi to nourish our bodies and lift our spirits! 🌱🥘 Palak Khichdi is my absolute favorite this season! With fresh, vibrant spinach available in abundance, it’s packed with nutrients that are excellent for your eyes, skin, heart health, and even boosts your immune system. Who wouldn’t want that, right? 💚 Plus, the flavor explosion from the special tadka takes this dish to a whole new level! 💥

Here’s how you can recreate this winter delight at home:

..1️⃣ Soak 1 cup rice, 1/2 cup tuvar dal, and 1/2 cup yellow moong dal for 2 hours.
..2️⃣ Pressure cook dal-ricewith salt, 1/2 tsp haldi, and 3 cups of water until you hear 3 whistles.
..3️⃣ Blanch 200 gm palak (spinach) and make a smooth puree.
..4️⃣ In a pan, heat 2 tbsp ghee or oil, add 1.5 tsp jeera, 1/2 tsp hing, a small piece of finely chopped ginger, and 4-6 garlic cloves.
..5️⃣ Sauté, then add 1 chopped onion and mix in spices: 1/2 tsp haldi, 2.5 tsp dhaniya, chili powder to taste, and 1 tsp garam masala. Cook for 5 mins.
..6️⃣ Stir in 2 medium size chopped tomatoes, a small piece of carrot finely chopped, some boiled sweet corns (optional) and 1/2 cup fresh green peas. Finally, add the palak puree and cook for 7-10 mins.
..7️⃣ Combine with the cooked khichdi and finish with a sizzling tadka of 2 tsp ghee, finely sliced 2 cloves of garlic, couple of whole dried red chillies and 1/2 tsp Kashmiri red chili powder for nice color.
