I'll have to remember the thyme next time! I did an 18 hour dry brine, the salt actually does penetrate a good bit – its is the other spices that do not. I also separated the silver skin and the rib bones then threw it all into my slow cooker with some water for the next day. That way I had the stock and the natural gelatin taken care of at no additional cost. My cats got some shreds of meat from the over-stewed ribs before I added some onion scraps to the crockpot the next morning, your pups might have liked that. Additionally, I sliced the removed fat to air fry into fatty snacks (keto) and render some the lard for future high heat-stable use. Gotta' get me a probe thermometer!
